Carrot Green Pesto

  • 1 bunch carrot greens (about 1-2 cups)
  • 1 cup spinach
  • 2 or 3 garlic cloves
  • 1 tablespoon onion powder (optional)
  • 1 cup cashews (salted or unsalted)
  • 3/4 cup olive oil
  • sea salt and black pepper to taste

  • 1. Add all ingredients (except olive oil, salt, pepper) to the food processor
  • 2. Process until you have the pesto consistency you love
  • 3. Transfer to a large bowl and stir olive oil, salt, pepper into mixture
  • 4. Serve over pasta or gnocchi and ENJOY!
