Easy Vegan Enchiladas

 This is meal is easy and delicious!


Vegan Enchilada Bake

Ingredients:
  • About 18 small corn tortillas (or your favorite tortillas)
  • 2 cups enchilada sauce (you can use store bought or make your own HERE IS AN EASY RECIPE)
  • 1 can black beans (drained and rinsed)
  • 1 can of olives
  • 1 large tomato chopped
  • Lime juice
  • Spices: (chili powder, cumin, oregano, salt, pepper to taste)
  • Vegan mayo (optional)
  • Veggies for filling (whatever you've got) 
    • Examples: spinach, corn, peppers, onion, zucchini, celery, green beans, anything you like!
Directions:

  • Combine your vegetables for filling in a bowl, chopped into bite-size pieces
  • Mix in: black beans, 1/2 of chopped tomato, lime juice, spices and two or three tablespoons of vegan mayo (if you want them creamy/cheesy)
  • In a large casserole dish layer six tortillas (spread out to cover the bottom of the dish) then top with a small layer of veggie mix
  • Make this layer two more times, so you should have this pattern:

  1. Tortilla
  2. Veggie
  3. Tortilla
  4. Veggie
  5. Tortilla
  • Pour enchilada sauce all over casserole dish
  • Top with other half of chopped tomato and olives
  • Bake at 375 degrees for 30 minutes
  • Enjoy!
