Easy Vegan Enchiladas
This is meal is easy and delicious!
Vegan Enchilada Bake
Ingredients:
- About 18 small corn tortillas (or your favorite tortillas)
- 2 cups enchilada sauce (you can use store bought or make your own HERE IS AN EASY RECIPE)
- 1 can black beans (drained and rinsed)
- 1 can of olives
- 1 large tomato chopped
- Lime juice
- Spices: (chili powder, cumin, oregano, salt, pepper to taste)
- Vegan mayo (optional)
- Veggies for filling (whatever you've got)
- Examples: spinach, corn, peppers, onion, zucchini, celery, green beans, anything you like!
Directions:
- Combine your vegetables for filling in a bowl, chopped into bite-size pieces
- Mix in: black beans, 1/2 of chopped tomato, lime juice, spices and two or three tablespoons of vegan mayo (if you want them creamy/cheesy)
- In a large casserole dish layer six tortillas (spread out to cover the bottom of the dish) then top with a small layer of veggie mix
- Make this layer two more times, so you should have this pattern:
- Tortilla
- Veggie
- Tortilla
- Veggie
- Tortilla
