Simple Vegan Lasagna
This is the easiest veggie lasagna to make, and it is vegan!
INGREDIENTS:
- 7 cups of veggies (all the veggies you want) I typically use zucchini, tomato, corn, onion, and lots of spinach and greens
- 1 tablespoon minced garlic
- 1 tablespoon oregano
- 1 tablespoon basil
- 1 tablespoon rosemary
- 1 tablespoon thyme
- 4-5 tablespoons vegan mayo
- 1 jar of your favorite tomato sauce
- 1 package of your favorite lasagna noodles
DIRECTIONS:
1. Chop your veggies into bitesize pieces
2. Combine veggies, spices, and may in a large bowl and mix until everything is coated
3. Prepare your lasagna noodles according to the package
4. Coat a casserole dish with olive oil or cooking spray
5. Layer your lasagna (noodle - veggie mix - tomato sauce / noodles - veggie mix - tomato sauce) until you have a top layer of sauce
