Simple Vegan Lasagna

This is the easiest veggie lasagna to make, and it is vegan!

  • 7 cups of veggies (all the veggies you want) I typically use zucchini, tomato, corn, onion, and lots of spinach and greens
  • 1 tablespoon minced garlic
  • 1 tablespoon oregano
  • 1 tablespoon basil
  • 1 tablespoon rosemary
  • 1 tablespoon thyme
  • 4-5 tablespoons vegan mayo
  • 1 jar of your favorite tomato sauce
  • 1 package of your favorite lasagna noodles


1. Chop your veggies into bitesize pieces
2. Combine veggies, spices, and may in a large bowl and mix until everything is coated
3. Prepare your lasagna noodles according to the package
4. Coat a casserole dish with olive oil or cooking spray
5. Layer your lasagna (noodle - veggie mix - tomato sauce / noodles - veggie mix - tomato sauce) until you have a top layer of sauce
6. Bake at 375 degrees for about 45 minutes
7. Serve and enjoy
