Jamaican Jerk Wraps

These wraps are delicious, although they are quite spicy -- so heads up for the kiddos. Rastafarian culture eats ital (which is from the earth, vegan, and FRESH)...


Ingredients: 
  • 2 sweet potatoes cut into small cubes
  • 2 celery stalks diced
  • 1/2 onion chopped
  • 1/2 cup peas
  • 1 or 2 cups of greens (callaloo, collards, or dark kale)
  • 1 or 2 cups jerk sauce
  • drizzles of olive oil
  • 2 teaspoons turmeric
  • tortillas
  • bananas or plantains for the side if you are making spicy jerk sauce
Jerk Sauce
(You can also use your favorite store bought, there are tons of vegan/ital organic jars of jerk sauce)
COMBINE the following ingredients in your blender or food processor for homemade jerk sauce
  • 1 onion
  • 5 garlic cloves
  • 1/2 cup chopped scallions or chives
  • 2 hot peppers (scotch bonnet or habeneros)
  • 1 tablespoon of ground ginger
  • 2 tablespoon of thyme
  • 1 teaspoon cloves
  • 2 teaspoon all spice
  • 1 teaspoon sugar
  • 1 teaspoon sea salt
  • 1 teaspoon cinnamon
  • 1 teaspoon black pepper
  • 1 teaspoon nutmeg
  • 2 limes juiced
  • 4 tablespoons olive oil
Vegan Jamaican Jerk Wraps

1. Add the cubed sweet potatoes to a deep skillet and drizzle with olive oil, stir and heat for about 2 minutes


2. Add the onions and the turmeric and cook (constantly stirring for another 5 minutes)
3. Add the peas, half of the greens, the celery, and the jerk sauce (coat it is as much as you like with sauce
4. Cook for another 5-10 minutes (it is okay if these veggies are still a little raw, it's healthier)




5. Place two large spoon fulls of jerk veggies into a warmed tortilla and top with the remaining raw greens
6. Serve with bananas or grilled plantains if you are using really spicy peppers (taking bites in between will  help cut the fire!)
