Costa Rican Hearts of Palm Vegan Sandwich

 This tasty little sandwich celebrates a Costa Rican favorite: hearts of palm! Hearts of palm come from the center of the sabal or peach palm tree, and are used in many Costa Rican, Brazilian, and Floridian dishes.


Ingredients:
  • 2 cans heart of palm
  • 2 stalks of celery (diced)
  • 1-2 tablespoon chopped dill (fresh or dried)
  • 2 green onions (chopped)
  • 1/2 tsp garlic
  • 2 large tablespoons of vegan mayo
  • 1/2 lemon juiced
  • salt and pepper to taste
Directions:
1. Rinse and drain your hearts of palm and slice them into small chunks



2. Juice your lemon and mix the hearts of palm in the juice


3. Combine all other ingredients into a large bowl and let sit in the fridge for 1 hour


4. Serve on your favorite vegan bun with a lemon wedge for extra juice [serve with fresh fruit on the side for a delicious lunch]
