Simple Summer Stone Fruit Crisp

Our best friend's backyard is a stone fruit paradise! Peaches, nectarines, and plums galore! We picked these gorgeous drupes and baked a delicious Crisp, vegan style of course..


Ingredients:
  • 3 or 4 cups of sliced stone fruit (nectarines, cherries, peaches, plums, etc)
  • 1 cup oats
  • 1 cup flour
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 3/4 olive oil
  • 1 tablespoon salt
Directions:
  1. Slice stone fruit and spread in the bottom of a casserole dish
  2. Combine the rest of the ingredients (mixing the olive oil in last with a spoon or your hands to make a crumble topping)
  3. Layer crumble topping over stone fruit
  4. Bake for 40 minutes at 375 degrees
  5. Cool and enjoy (great with ice cream)
